The Proven bread systems start with your finding your farmer. The most important ingredient in your bread is the one almost no one questions. Flour arrives in a bag — it is anonymous, interchangeable, no story and no face. That bag is the end of a long supply chain you have no part in. This is where you step out of it.
These are the farmers and millers our community have connected to, researched, and in many cases I know farmers and millers personally: people growing grain with real care for the soil, for diversity, for the nutritional integrity of what reaches your gut. Some are keeping alive the heritage and population grains that monoculture — and the law itself — all but erased. Some are rebuilding whole regional grain economies from the ground up. Every one of them is part of the system this book is trying to restore.
This is not a shop. It is the first real connection in the Proven System — soil to grain to fermentation to gut. When you buy grain directly from a farmer, something shifts: you stop being a consumer at the end of a chain and become part of a relationship. And relationships are how a better food system is actually built — one connection at a time.
Find the grower nearest you. Reach out. Tell them what you are baking, and ask what they are growing. This is the moment your bread stops being something you buy and becomes something you are part of.
