What is Mono Bread?
The problem with mono is repetition
Mono Bread is the term used by Dr Vanessa Kimbell to describe bread that has been progressively simplified until much of the biological diversity traditionally associated with bread has been removed. The blame for so many health issues in recent decades tended to land on wheat and gluten, rather than on what a century of narrowing had done to the grain, the flour and the fermentation. These were just some of the changes and what she noticed that people also had no vocabulary for what had gone. It is worth noting that Vanessa has a degree in Psychology of Human Communication which is probably why she understood better than most, that naming it mono bread was useful: it gives people a word for the thing they wercae never asked about, and a word is the beginning of a choice.
Mono Bread is not necessarily a single “bad” loaf. The deeper problem is what happens when the same simplified loaf becomes the bread we eat every day. There was no existing term for the extraordinary number of reductions that had accumulat aed in one everyday food.
Bread had been reduced in almost every dimension simultaneously: fewer crop species, fewer grain varieties, increasingly refined flour, less of the grain retained, fewer microorganisms, shorter fermentation, fewer fermentation metabolites, less fibre diversity, fewer phytochemicals, less connection with soil and season, fewer local mills and bakeries, less fermentation knowledge and, ultimately, less biological diversity reaching the person eating it.
And each individual reduction already had a name. Agronomists could talk about monoculture. Geneticists about genetic erosion. Ecologists about biodiversity loss. Nutrition scientists about refining and fibre depletion. Microbiologists about reduced microbial diversity. Food scientists about industrial processing. Economists about consolidation. Bakers about the loss of long fermentation and regional grain traditions.
But there wasn’t a word that brought all of this together.
Vanessa looked at all of these reductions together and realised that they were part of the same story.
She noted in her book The Sourdough School that for decades our bread system has rewarded uniformity: predominantly wheat, increasingly refined flour, highly controlled fermentation and crops selected to perform reliably at enormous scale. We became very good at producing cheap bread.
Mono Bread is bread made within a system built around one dominant grain, refined flour, rapid fermentation and a very limited community of microorganisms. At its most extreme, it is one flour, one commercial yeast and one highly standardised way of making bread.
So the problem of baking healthier bread is not simply the loaf. It is that the conventional system extends through the way we grow grain, mill flour, make bread and feed people — and at almost every stage, diversity has been reduced.
Research in humans gives us one reason why this matters. Our gut microbes do not all eat the same thing. Different plants provide different fibres, resistant starches and phytochemicals that can be used by different members of the microbial community. Research associated with the American and British Gut projects found that people eating a greater variety of plants tended to have more diverse gut microbiomes. The widely used idea of 30 plants a week grew from this observation.
A similar principle can be seen in soil and agricultural ecosystems. Greater plant and crop diversity can increase the variety of resources entering the soil through roots and residues. This can support more diverse microbial communities and more complex biological networks.
Mono Bread represents something bigger than white sliced bread
It describes, in two words, the complexity of bread produced by a system that has become simplified at every level.
This is why Mono Bread has a name: naming the pattern allows us to see it.
For a long time, however, there has been no affordable, simple way for ordinary bakers to step outside the Mono Bread system.
Diversity Bread® is the opposite.
The question is not whether bread itself is inherently problematic. It is whether, by making financial cost, speed, uniformity and scalability the dominant priorities in bread production, we removed many of the things that once made bread biologically, nutritionally, culturally and ecologically diverse.
What Dr Kimbell also recognised was that even the most motivated artisan baker could not simply increase diversity indefinitely. Every additional grain, pulse, seed or botanical introduces sourcing, storage, formulation, production and financial complexity. Diversity needed to be commercially possible, not merely desirable.
That became part of the reason for developing Diversity Bread®: to make putting diversity back into bread practical and scalable, rather than leaving it as something only the most committed baker could achieve.
