Bromate refers to potassium bromate, a flour improver sometimes added to white bread flour to strengthen dough and promote higher rising. It became popular in industrial baking for its ability to produce light, fluffy loaves quickly. However, growing scientific concern over its safety has led to major regulatory changes worldwide.
Health Concerns and Legislation
Research has linked potassium bromate to potential health risks, including carcinogenic effects. As a result, it is banned in the United Kingdom and throughout the European Union under Regulation (EC) No 1333/2008 on food additives. The additive is considered a possible human carcinogen by the International Agency for Research on Cancer (IARC), prompting strict regulation.
In contrast, bromate remains legal in some countries, including the United States, where it is still permitted for commercial baking, although some states and companies have phased it out voluntarily.
