This week our students are taking on a tricky but rewarding bake - 100% wholemeal sourdough!

The most nutritious version of this 100% Wholegrain Sourdough Boule is made with our Blend No 2, but it is extremely challenging. So initially students might want to blend 50% commercial wholegrain roller milled with 50% Blend No 2 to get some strength into the dough.

One of the biggest issues around using a plastic lame to score sourdough, of course, is that eventually the blade will become blunt and the lame could end up in landfill.  So several years ago I talked to my dear friend EJ about developing a lame with a replaceable blade. And he came up with this very beautiful hand carved wooden lame.

Very sadly EJ is no longer with us. Recently a friend of EJ’s who is also a wood turner and carver offered to make these again for us in remembrance of our dear friend.

Social injustice isn’t just the giant conglomerates that manufacture ultra processed foods, it’s also the medical, scientific and wellness professionals exacerbating and perpetuating misinformation about gluten & grains by only discussing research on fast fermentation techniques in research. 

I’ve added a porridge recipe to @vanessakimbell today after listening to @glucosegoddess declare oats are not healthy 😩 

It is so frustrating listening to brilliant people ( yes she’s amazing) totally missing the most fundamental principle of process when discussing how an ingredient impacts our health. 

Almost all studies totally flawed when it comes to the impact  of grains on us. Why? Because evolved with fermentation &  the process significantly changes the nutritional value of our basic ( &least expensive foods, such as oats, barley and wheat.) 

We teach BALM (baking as lifestyle medicine) and our protocols teach healthcare professionals and bakers how to approach bread is a form of lifestyle medicine which involves sourdough. 

It is an framework that is backed by over 700
studies to empower everyone to enjoy the benefits of nourishing bread regardless of their financial status, because sourdough isn’t just for the wealthy!

Today’s food science looks beyond the basic nutrition of a plant. Focus has shifted to the levels of ‘phytonutrient’, or phytochemical present. Phytochemicals represent various bioactive components within the plant, including within the grains we consume such as wheat, barley and rye. These bioactive molecules include phenolic compounds, and these represent a whole family of ‘Polyphenols‘

Salt does more than improve the flavour of bread. Salt does more than improve the flavour of bread. It intensifies it. It reduces bitterness in food, enhances the sweetness and provides balance of flavour. 

Furthermore, it aids in gluten development and acts as a natural preservative. Salt also retards the dough.

The Baking As Lifestyle Medicine (BALM) Protocol The Baking As Lifestyle Medicine (BALM) Protocol

The current food system is broken at multiple levels, from the pesticides used in our soils to the emulsifiers and additives adulterating industrially-processed foods. Nowhere is this more apparent than in the bread we eat.  The figures reported by the UK Flour Millers say that bread is bought by a staggering “99.8% of British households” and that “the equivalent of nearly 11 million loaves are sold each day. Approximately 60-70% of the bread we eat is white and sandwiches are thought to account for 50% of overall bread consumption. Average bread purchases are the equivalent of 60.3 loaves per person per year.” 

Most bread sold is made by modern processing methods that strip heart-healthy whole grains of their nutrient contents, resulting in low-fibre bread with a high glycemic index. Over time, white processed bread can increase a person’s risk of insulin resistance alongside other lifestyle diseases.

It's #BowelCancerAwarenessMonth which is why next It's #BowelCancerAwarenessMonth which is why next week's Q&A is with Dr Alex Davidson, talking about Bowel Cancer & Sourdough. Unfortunately, Bowel cancer is the 4th most common cancer in the UK, accounting for 11% of all new cancer cases (2016-2018).

A recent study funded by Cancer Research UK and the World Cancer Research Fund, led by the Imperial College London team, has found a potential link between the consumption of ultra-processed foods and an increased risk of various types of cancer. 

In contrast, whole grains, including high-quality bread, are associated with cancer prevention, particularly gastrointestinal and hormonally-dependent cancers.

There is confusion about the way that retailers and bakers label bread in the UK, and the charity Sustain has flagged many cases of misleading bread labelling.

Lack of standardisation: Currently, there is no standardisation of bread labelling in the UK, which means that different breads may be labelled differently depending on the manufacturer or retailer. This can make it difficult for consumers to compare different breads and make informed decisions about which ones to purchase.

Misleading claims: Some bread manufacturers make misleading claims on their labels, such as using terms like “whole grain” or “multigrain” without meeting the criteria for these designations. This can lead to confusion among consumers who are trying to choose healthy, nutritious bread options.

One of the biggest issues around using a plastic lame to score sourdough, of course, is that eventually the blade will become blunt and the lame could end up in landfill.  So several years ago I talked to my dear friend EJ about developing a lame with a replaceable blade. And he came up with this very beautiful hand carved wooden lame.

Very sadly EJ is no longer with us. Recently a friend of EJ’s who is also a wood turner and carver offered to make these again for us in remembrance of our dear friend.

The current food system is broken at multiple levels, from the pesticides used in our soils to the emulsifiers and additives adulterating industrially-processed foods. Nowhere is this more apparent than in the bread we eat.  The figures reported by the UK Flour Millers say that bread is bought by a staggering “99.8% of British households” and that “the equivalent of nearly 11 million loaves are sold each day. Approximately 60-70% of the bread we eat is white and sandwiches are thought to account for 50% of overall bread consumption. Average bread purchases are the equivalent of 60.3 loaves per person per year.” 

Most bread sold is made by modern processing methods that strip heart-healthy whole grains of their nutrient contents, resulting in low-fibre bread with a high glycemic index. Over time, white processed bread can increase a person’s risk of insulin resistance alongside other lifestyle diseases.
