There are two visions of Miss Baker®

I own the Miss Baker® PRO XL double-arm mixer (RRP £2330 ) which kneads between 1.5 kg to 6 kg.

The smaller version is the Miss Baker® PRO (RRP £2490) and kneads between 0.5 kg and 3kg.

These prices are related to the WHITE version. The Stainless Steel version (Miss Baker® INOX) is a little bit more expensive, and the RED version a little less – Bernardi will confirm the price for this.

Both are ideal for home bakers as well as professional bakeries.

I’ve been using the Miss Baker PRO XL for years now and I absolutely love it.  It’s a beautiful machine, that has an almost mesmerising action, but one that time and time again I get consistently great results with. So I am delighted to be able to recommend these mixers to you in our shop.

The Miss Baker® is a small-sized double arm mixer capable of providing the best technology for the preparation of leavened doughs, even with 100% hydration. It is the very first bench mixer with double arms to knead small quantities.

Miss Baker PRO XL is the larger of the two mixers and kneads between 1.5 kg to 6 kg of dough and yet still occupies a small space.

Miss Baker PRO kneads between 0.5 kg to 3 kg of dough.

Miss Baker® PRO and PRO XL are both suitable for larger yeast preparations in confectioneries, basic dough for bread, pizzas and focaccia, short pastry, flaky pastry and egg pasta, sweet dough, brioches and panettone as well as refreshments for sourdough. Both are ideal for home bakers as well as professional bakeries.

The Miss Baker® range, 100% Made in Italy and attractively designed, is a product of Bernardi Srl, a company who have specialised for more than 35 years in double-arms mixers technology. The exclusive compact kneading arm system is a patent of Bernardi that allows the production of machines with compact dimensions and optimal price-performance ratio.

Both Miss Baker® Pro and Pro XL have 5 speeds and work from 35 to 65 strokes adjustable from the control panel with touch-system. Furthermore, the removable arms allow easy cleaning of the mixer.

Each mixer is handcrafted in Italy with very short delivery time.

Miss Baker® Pro XL and Miss Baker® Pro are available in WHITE, RED colour and INOX, which is completely made of stainless steel. The INOX is slightly more expensive but Bernadi will confirm this for you.

One of the biggest issues around using a plastic lame to score sourdough, of course, is that eventually the blade will become blunt and the lame could end up in landfill.  So several years ago I talked to my dear friend EJ about developing a lame with a replaceable blade. And he came up with this very beautiful hand carved wooden lame.

Very sadly EJ is no longer with us. Recently a friend of EJ’s who is also a wood turner and carver offered to make these again for us in remembrance of our dear friend.

The Baking As Lifestyle Medicine (BALM) Protocol The Baking As Lifestyle Medicine (BALM) Protocol

The current food system is broken at multiple levels, from the pesticides used in our soils to the emulsifiers and additives adulterating industrially-processed foods. Nowhere is this more apparent than in the bread we eat.  The figures reported by the UK Flour Millers say that bread is bought by a staggering “99.8% of British households” and that “the equivalent of nearly 11 million loaves are sold each day. Approximately 60-70% of the bread we eat is white and sandwiches are thought to account for 50% of overall bread consumption. Average bread purchases are the equivalent of 60.3 loaves per person per year.” 

Most bread sold is made by modern processing methods that strip heart-healthy whole grains of their nutrient contents, resulting in low-fibre bread with a high glycemic index. Over time, white processed bread can increase a person’s risk of insulin resistance alongside other lifestyle diseases.
