It is very hard for me to say specifically as there are so many factors that affect the digestibility, from the flour to the way you treat your starter to the hydration to the method you use and lots in-between.  I have a course coming up in Autumn which is specifically for people with digestive issues.  Do take a look.  In the mean time speaking form my personal experience I find a minimum of 24 hours is required for me to not react with digestive issues. kind regards  Vanessa]]></description>
