Hi there. You can bake sourdough with buckwheat, but it couldn&#039;t be a one for one substitution with a regular recipe because buckwheat flour does not have any structure to it and does not behave the same way as wheat flours. Many people who are gluten free bake with a starter made with brown rice flour. Unfortunately we do not have any gluten free bread recipes on the site at this time.]]></description>
