Part of the support of being a student is being able to chat with me to diagnose issues. So when things are not quite going as you would want them to, the best thing that you can do is talk to me .
It is like being a detective .. I need to know everything and I am usually able to help, that said there are so many factors that affect how your loaf turns out, that I simply can’t factor in all the variables by just talking on the phone. So this exercise is called The Loaf Analysis Form.
This form gives me ALL the detailed information and specific details in order for me to accurately diagnose what is going on with your bread. From there we can discuss what you need to do to get the results you want.
I know this sounds like a lot of work! But it will be worth it I promise.
Just to reiterate that if you haven’t kept records or taken photos you will not have the information required to feedback specific details about the bread you have made, and without this information I’m actually just guessing .. which is ultimately is a waste of time for everyone … so I’m not able to help without this form completed.
Keep notes of your bake using the sourdough loaf record, and you MUST take the following photographs as you bake.
- A photo of your starter as you use to to make your leaven
- The leaven as you use it.
- A side shot of your bread.
- A shot of the front of your loaf to show the scoring
- A crumb shot ( cut in half.)

This takes time, and it is detailed, but it is one of the most valuable exercises you can do.
Put the kettle on, make sure you have about 30 minutes free and that you have your loaf record, schedule and flours you used to hand.
