I love folklore and fantasy. I also have IBS and a Naturopathic Nutritionalist forcefully recommended, an “absolutely imperative,” that I give up wheat including my regular sourdough loaves. Even though I knew Vanessa recommended sourdough for IBS sufferers, I didn’t challenge the nutritionist’s advice until I checked the evidence. When it comes to my health I’m an empiricist and the research evidence indicates* that the long fermentation process may be advantageous for people with IBS. So…. not only does it taste great, it’s doing me good. Keep up the good work Vanessa debunking the myths about sourdough and our health!
